Champagne Dinner on Wednesday, May 8th

Is Champagne for special occasions, or do occasions become special when you open a bottle? Join us to decide on Wednesday May 8th as we sip our way from Verzenay to Oger with five grower-producers and a meal paired by the excellent chefs of Publican Quality Meats. The evening will be led by Peter Wasserman, wine consultant and renowned exporter of French wines for Becky Wasserman Selection.

The event will begin promptly at 7pm, featuring five wines and four courses.

Buckwheat gougeres with smoked fish & fromage blanc

Pairing: NV Demiere-Ansiot Brut Blanc de Blancs Grand Cru (Oger)

1st course

Pasta alla chitarra, oysters, cream & hazelnut oil

Pairing: NV Vincent Carre Brut Premier Cru (Trepail)

2nd course

Burgundy snails, white sausage, herbed butter & mustard seeds
Pairing: NV Godme Reserve Brut Premier Cru (Verzenay)

3rd course

Porcini-rubbed steak, jus, turnips & ramp salsa verde
Pairing: 07 Jose Dhondt "Mes Vielles Vignes" Brut Blanc de Blancs (Oger)

4th course

Black pepper pavlova with strawberries & vanilla cream
Pairing: NV Camille Saves Rose Brut Grand Cru (Bouzy)

Chicago Craft Beer Week Dinner!

On May 22nd, old world meets new guard as Vanberg & DeWulf and Solemn Oath Brewery team up to take over our beloved little butcher shop for a 4-course meal paired with comparative selections from both beer enterprises, showcasing a balanced lineup of S.O.B. brews and the diverse collection of V&D (representing six different breweries and twelve incomparable beers all-told!). Here’s the run-down of our one-night only menu featuring never before seen Publican dishes, crafted by the unequaled team of chefs Paul Kahan, Chris Kuziemko and Cosmo Goss:

pairings: Witkap Stimulo from Brouwerij Slaghmuylder (V&D); special guest collaborative brew

1st course:
pork a la tonnato - fava beans, fried lentils, purslane & mint
pairings: Oxford Comma (S.O.B.); Foret Blanche Organic from Brasserie Dupont (V&D)

2nd course:
king salmon - tessa, green strawberries & grilled ramps
pairings: KBV Captured by Vikings (S.O.B.); Contessa Italian Pale Ale from Birreria Amiata (V&D)

3rd course:
roast goose  - mustard seed, cardamom, pluots & hazelnuts
pairings: E-Ville (S.O.B.); Vicaris Generaal from Brouwerij Dilewyns (V&D)

4th course:
Dessert TBD
pairings: Chub Guts (S.O.B.); Scaldis from Brasserie Dubuisson (V&D)
