Born from the collective vision of Executive Chef-Partner Paul Kahan and Partners Donnie Madia, Terry Alexander, and Eduard Seitan, Publican Quality Meats is One Off Hospitality Group’s neighborhood butcher shop, café, and market, aptly located in Chicago’s historic meatpacking district.
We are driven to deliver quality to the community. From hand curated selections of local and artisan products, to our incredible In-House Charcuterie and Dry Aging Program a great deal of attention and care goes into every product. This mission shines through in our delicious sandwiches, soups, meats, cheeses, & bread.
Butcher Shop
Helmed by renowned Head Chef and Butcher Rob Levitt, the multi-faceted property serves as a butcher shop, which provides an assortment of local, sustainably raised meats, house-made sausages, and charcuterie with meat sourced from small family-owned farms across the Midwest, such as Slagel Family Farms.
CafÉ
PQM offers a highly seasonal menu featuring sandwiches, soups, and salads made with house-made meats, local produce, and bread from our sister bakery, Publican Quality Bread. We also feature our house-made charcuterie and artisanal cheese plates to dine-in or carry out.
Market
PQM proudly carries a wide array of boutique provisions and ingredients hand-selected by the culinary team. We make sure that every artisan provider cares as much about quality as PQM.
